Pinspiration – numero ocho

a few weeks ago it was super cold and i was jonesing for some soup.  i absolutely love nordy’s tomato basil soup have seen a recipe for it, on pinterest of course.

but when i looked at this one, it just called to me.

maybe it’s because it is super easy to make.

maybe it’s because it has a “secret ingredient”.

maybe it’s because it only takes 35 minutes.

maybe it’s because it calls for half and half.

but mostly, maybe it’s because it meant that i finally “had a reason” to buy an immersion blender.

first you saute some onion and garlic in olive oil.

then you add 3 cans of diced tomatoes, juice included, and some chicken broth.

and if you can’t tell, add the “secret ingredient” – pesto!

stir some and then go ahead and add some sugar, thyme, and salt and pepper to taste.  if you have bay leaves on hand, you’ll want to throw one of those in as well.

then you just let it sit. and simmer. and do its thang.

after about 30 minutes of simmering, remove the bay leaf and plug in your immersion blender.  oh yea!!

then blend a bit.  and a bit more.  and then just a bit more.

once you’re done blending, to the consistency of your liking, pour in some half and half.  mmmm………

finally, butter some bread, add some cheese, and grill them together.

and enjoy your tomato “secret ingredient” soup with a grilled cheese sandwich.

and tell your wallet and/or husband to thank you for not going to nordy’s to buy a cup of tomato soup when you just made some for half the price and you have leftovers for the next few days.

  1. YUM. love your soup mug, too! :) i saw this recipe and wanted to make it soon but haven’t yet … and ALSO got an immersion blender once, returned it because i didn’t want a one-use gadget but now want one again. ha ha. what kind did you get?
