and so easy to make!

it’s called chicken cobbler.  it’s basically a chicken pot pie but without the veggies.  ummm…yes, please!  that’s my kind of chicken “pot pie”.

you start out with shredded chicken.

and what better way to shred chicken then to have your stand mixer do it for you??

i saw this pin about a year ago, pinned it, and then forgot about it. until i saw this recipe.

and i tried it….

turned out awesome!  it only took a few minutes (much quicker than having to wait for the chicken to cool down and then shred it by hand) and i was ready to start on this chicken cobbler.

after spreading the shredded chicken in a 9×13, i started on the next step.  one can of cream of chicken and half a can of water mixed together.

then you spread it onto the chicken.  and get started onto the next step.  mix self-rising flour, buttermilk, and melted butter.

spread evenly over the chicken to form the crust.  then pour {homemade} (or not) chicken broth all over.

place in the oven and wait for the crust to turn golden brown.

then place in a bowl and enjoy!

this recipe was definitely easy to follow and didn’t take much time to make. in fact it was the perfect dish for my neighbor-a and i to fellowship over. i prepped it at home, walked to her house, popped it in the oven, and hung out while waiting for it to cook.

the crust was a little sharp for me but i think it just needed a few more minutes in the oven. definitely a keeper!
