pinspiration – numero veinte y uno

when i saw this recipe i just knew it had to be made.

cheese-yummy. quinoa-tasty. carrots and broccoli-veggie-y.

i shredded some carrots (plus some more for future use) and minced some broccoli and sauteed them with garlic in butter.

following the recipe, i then added two cups of quinoa and mixed it around for the butter to cover. then i poured four cups of liquid (read: chicken broth) and let it simmer.

when it was done cooking, i added a few cups of cheese, some more butter, a bit of milk, and then mixed it altogether.

this is definitely a repeat recipe. it’s like macaroni and cheese but healthy. super healthy. paul looked up quinoa and quinoa (3.5 ounces) alone has 14 grams of protein and 7 grams of fiber. and if you don’t use all the butter that the recipe calls for it’s even healthier. i should know, i’ve tried it.

Pinspiration – numero doce

wow.  this meal was easy to make and delicious to eat.  it is definitely a keeper.

even paul liked it and he is not a fan of cooked broccoli.

i found this recipe on pinterest sometime last year.

i think i was attracted to it because of the picture.

i am definitely a visual eater. it looked just so yummy.

and the fact that it included orzo and cheese.

i forgot to take pictures while i was making the cheesy broccoli orzo so here it is all finished.

after draining the ozro and broccoli i added cheddar cheese and grated parmesan cheese, butter, and some milk. and then mixed it altogether.

then i pounded some chicken until it was all an even size, brushed some olive oil and sprinkled salt and pepper.

then i dropped it in a pan and fried it.

*side note here: this was my first time ever pan frying chicken and i fell in love with it.

and here it is!  yum!

this is definitely a keeper! it was really easy and simple to make. i encourage you to try it too!
